Very unique and exclusive! The village of Vayres is actually a small town a few minutes from St. Emilion and Pomerol, only 4 or 5 of the Chateaux produce a white. The Sauvignon from Chateau Fage has the same characteristics and can be compared to a top Graves blanc for half the price!
One of my favorite wines to pair with this holiday treat is Bordeaux. Long before the Dutch drained the swamps of the region to make way for vineyards, the Bordeauxlais were raising sheep. So, when wine production started in earnest, they of course made the wines to pair with the local cuisine.
